Sweet and Sour Glazed Spam wiches




Sweet and Sour Glazed Spam-wiches
2 cans of spam diced
1 small onion, finely chopped
1 green pepper, finely chopped
1 can pineapple chunks with juice
1 Tbsp Worcestershire Sauce
3 tbsp white vinegar
2 tbsp cornstarch
½ cup water
Oil
Sauté onions, green pepper and spam in oil until onion and pepper are soft and spam is browned. Stir in can of pineapple and juice, Worcestershire sauce, and vinegar. Heat thoroughly, then add the cornstarch that has been combined with the water. Heat to a boil and cook until it makes a thick glaze. Serve on buns.

Southwestern Avocado Burgers

Southwestern Avocado Burgers

Hamburger patties
Sliced Avocado
Gorgonzola cheese
Spicy southwest chip dip
Deli sliced ham
Onion buns

Cook hamburger patties, butter and toast buns. Warm ham in a skillet. Spread dip onto each bun, place hamburger, cheese, avocado slice and bun, top with warm ham.

Chicken breast cut into pieces
Flour
Taco seasoning
Can refried beans
Small can green chilies
Green enchilada sauce
Con queso cheese (Velveta Type)
Milk
Corn tortillas

Mix flour and taco seasoning in bag and coat chicken. Fry in oil until done. Mix refried beans, green enchilada sauce and green chilis in a pan and heat. Mix cheese with a little milk and microwave until melted. Remove chicken from pan and fry tortillas until golden. Top a tortilla with chicken, then bean mixture, then cheese. Top with diced tomatoes, lettuce, sour cream or guacamole if desired.

Spinach Stuffed Pork Loin Chops

Spinach Stuffed Pork Loin Chops

Boneless pork loin chops
Stuffing mix
Frozen spinach
Canned mushrooms
Cream of mushroom soup
Prepare stuffing, thaw and drain spinach, chop mushrooms.

Mix above ingredients together, place spoonful on bottom of a pork loin chop and wrap chop over mixture, line a pan with stuffed chops, mix 1 can of soup with 1 c. milk, pour over chops. Heat oven to 375 , cover with foil and cook for 1 hr or until done.
